There is not and easy mode mode of any sort with Souls it's come as it is or not at all. The alternative is full cheating with infinite stats.Here is some advice from a person who's got 1800 hours on Dark Souls, Dark Souls II and Dark Souls II: Scholar of the First Sin.Use a Greatshield for your 1st Playthrough: Anything that is not bigger than you will bounce off the shield making them very vulnerable.Use a Spear or an Ultra-Greatsword Class weapon: Many enemies are staggered by them and the sweep strikes are very good at preventing you from being surrounded.
Spears may be used while blocking with a Shield but at the cost of more Stamina.Carry a Crossbow/Bow for dealing with Casters, Small Enemies or enemies you don't want to be close to.Carry Poison Bolts/Arrows for when you reach Big Enemies who don't bound off your shield and use Poison to weaken their health since you can likely only take 1-2 hits to your shield and maybe 4 to your face.Never deplete your Stamina. If you can you always want to be able to roll.Invest in Adaptability early on to raise your Agility Stat (90-96 is ok for the 1st half of the game. 100 is good later) this will increase the time you are invulnerable while rolling. To assist in this NEVER wear more than 70% of your 'Equip Load' so you may roll easily if you must.Do not be afraid to Summon Players for help with difficult areas or bosses.

Cheapens the experience. A hollow victory in my mind. Same as me with my 100's of hours of Souls games experience facing a newbie with less than 30. Defeating them feels so cheap.
